A delicious twist on a true classic: these stroopwafel cookies combine rich cookie dough with pieces of real stroopwafel into a sweet, soft treat that’s easy to bake and hard to resist.

Ingredients

  • 150 g unsalted butter
  • 100 g light brown sugar
  • 50 g granulated sugar
  • 2 eggs
  • 330 g all-purpose flour
  • 2 tbsp cocoa powder
  • 1 tbsp cornstarch
  • 1 tsp baking powder
  • Salt
  • 16 Daelmans mini stroopwafels
  • 200 g white chocolate chips

Instructions

  1. Preheat the oven to 300 degrees Fahrenheit.
  2. Mix the butter, light brown sugar, and granulated sugar until smooth. Then add the eggs one at a time and mix until smooth and creamy.
  3. In a separate bowl, combine the flour, cocoa powder, salt, cornstarch, and baking powder. Sift this over the butter mixture.
  4. Chop the stroopwafels into pieces and fold 2/3 of them, along with the white chocolate, into the dough.
  5. Roll the dough into balls and place them on a baking sheet. Make sure to leave enough space between the balls, as they will spread in the oven. Press the remaining stroopwafel pieces into the tops of the dough balls. Bake the cookies for about 15 minutes.
  6. Let cool on the baking sheet for about 20 minutes.
