Stroopwafel Apple Crumble

Ingredients

  • 21 ounces cooking apples (peeled, cored and sliced to 1 cm thick)
  • 2 tbsp sugar
  • 2 tsp mixed spices
  • 6.3 ounces plain flour
  • Pinch of salt
  • 3.2 ounces cold cubed butter
  • 3.2 ounces sugar
  • 4–5 Daelmans Stroopwafels, chopped
  • Cream or custard for serving (optional)

Instructions

  1. Heat the oven to 170°C fan.
  2. Toss the apples with the sugar and spices and place them in a 23 cm deep round baking dish, or divide them over individual deep dishes if preferred.
  3. Mix the flour with a pinch of salt. Rub in the butter until the mixture resembles crumbs, then mix in the sugar and the Stroopwafels.
  4. Pour the crumb mixture over the apples, making sure everything is evenly covered. Gently press the crumbs down.
  5. Place in the preheated oven for 35–40 minutes, until the top is golden and the apples are very soft when pierced with a knife or fork. Leave to stand for 5–10 minutes before serving with cream or custard.
